Vegetarian cookery, better known as vegetarian cuisine, is the art of preparing food which meets vegetarian standards, meaning that its ingredients don’t include meat and any animal tissue products.

Vegetarian foods can be of different types including traditional food that has always been vegetarian such as grains, fruits, cereals, vegetables, legumes and nuts; soy products, which are common protein sources; textured vegetable proteins which are made by soy flour; meat analogues which look and taste like meat; and eggs and dairy products analogues in vegan cuisine.

There are different cultures in the world which are famous for their vegetarian recipes, including China, India, South India, Indonesia, Japan, Italy, Russia and the Middle East.

The Chinese tradition bases its recipes on the use of noodles, eggplants, mushrooms, tofu and rice. The Indian cuisine is famous for its vegetarian products such as samosa, pakora, raitas, rasamand, khichris. In the south of India, vegetarian food such as sambar, kootu, upma, aviyal and olan is usually consumed. Furthermore, Indonesia offers different vegetarian dishes and meat substitute such as karedok, ketoprak, urap, and asinan. Japan, is another country that is well known for its vegetarian cuisine offering food such as castella, edamame, mochi, tempura and wagashi. As well as this, Italian food is known for its vegetarian pasta, pizza, bruschetta, parmigiana, polenta and risotto. Additionally, Russian cuisine is famous for its vegetarian soups such as borscht, shichi and kroshka. Finally, middle east vegetarian food such as falafel, hummus and couscous are well known all around the world
